Food Heritage of Mukim Tanjung Kupang

Common Dishes

SALAD & CONDIMENTS

Sambal Petai     Stink bean chili
Sambal Petai Kupang    Stink bean chili  cooked dry or in gravy
Sambal Belacan  Chili base flavoured with prawn paste, tomatoes, garlic or fried anchovies
Sambal Kilah  Noble volute snail cooked in chili 
Sambal Tumis  Stir-fried chili paste 

Urap  Young tapioca leaves & grated coconut salad


​MAIN DISHES / SNACKS

Ayam Merah   Braised chicken in tomato sauce
Botok-Botok   Grated coconut with fish spiced
Burasak Similar to rice dumpling, cooked in coconut milk
Jantung Pisang
    Heart of the banana, boiled and eaten with chili and soy sauce
Ketam Sambal Telur Crabs cooked in chili and egg
Kupang Green mussels
Nasi Lemak Mak Opi   Coconut rice by Sofi's Mum  
Sotong Kangkung   Squid with water spinach drizzled with shrimp paste and sweet sauce


DESSERT

Kueh  Local traditional cakes
Hari Raya Cookies Pineapple tarts, chocolate tarts, chocolate cup tarts, ants nest cake, and cats tongue cake (P.S. the names describe the appearance of the products; no animals and insects were harmed!)
Bubur Sum-Sum
  Rice and coconut milk pudding served with palm sugar syrup 

The Breaking of Fast

We visited the home of our co-founder's parents in Kg Pekajang on the first day of Ramadan (the month when Muslims worldwide fast from sunrise to sunset). They sit cross-legged on a mat and wait for the Azan prayer indicating the sun has set before they can break their fast. There are sweetened drinks, white rice eaten with a variety of dishes - chicken, bean sprouts, prawns and finishing with a sweet dessert.
